View Full Version : Chicken Adobo Recipe

Ingredients

* 8-9 chicken thighs
* 2 cups water
* 2 cups low sodium soy sauce
* 1 large onion (cut into rings)
* 8 garlic cloves (chopped up)
* 3 bay leaves
* 2 tablespoons cooking sherry
* 1 teaspoon ground black pepper
* 3 tablespoons molasses
* 1 tablespoon olive oil
* jasmine rice

Directions

1. In pressure cooker, combine water, soy sauce, onion, garlic, bay leaves, sherry wine, black pepper and molasses. Place cooker over medium high heat with lid off so the liquid can start to heat up.

2. In a separate pan, heat olive oil over medium to medium high heat. Brown the chicken thighs on both sides. Once browned, add directly to the liquid in the pressure cooker. Stir a bit to get the chicken thighs down into the liquid.

3. Place lid on pressure cooker and bring heat up to high. Once the pressure cooker valve starts whistling and rocking around, drop the heat to medium high and set the timer for 25 minutes.

4. Use this time to cook some jasmine rice. Make as much as you like and simply follow the directions on the bag. When the rice is done, remove it from the burner so the bottom doesn't burn and get hard.

5. Once the 25 minutes are up, remove the pressure cooker from the heat and run cold water over it to release the pressure and open the cooker. Remove the bay leaves. Serve chicken and sauce over jasmine rice, ENJOY!

the sauce and it's rich flavor is really appetizing!! rice is best with it and if you're really hungry bread will be a good partner too!:D

For a twist, I like pinapple chunks added to it so that it tastes a little sweet!

I'd like to try that. But I think I'll just add the juice because I'm not that crazy with the real pineapple bits. :)

You should try adding hard boiled egg and potatoes too. :) Makes it go a long long way if one is on a budget and you have a lot of people to feed.

Chicken adobo is best served when the chicken slices are small. That way the taste will surely appear even on in the bones of the chicken.

There was one time I read in a Filipino food magazine that there are certain types of adobo that use beer as an ingredient. In that case, I think I'll try it with Red Horse beer. Might be good. :)

I love my adobo salty without traces of sour or sweet taste. However, my man wants it sweet. I had to adjust my recipe. I use one part sugar to one part vinegar and two parts soy sauce. =) I love adobo. Have you heard of white adobo. You cook it with just salt and pepper. Cook it till all the liquid has evaporated. And it's yummy as it can be.

This is also a great way to add a twist to the adobo. Adding gata. It still retains the salty sourness of the adobo but with a new level of creaminess.

Just try not to add too much gata because it might end up to be cloying (nakakaumay)

My kids love 3days adobo, day 1 marinate, day 2 fried the chicken and pork, day 3 simmer until the meat is tender

really? this is something new, I haven't try this...maybe if would put red horse, it should be served with a warning ... Eat Moderately! hehe
