I completely agree and the list contains the ones I'd like my foreigner friends to try as well. But you know, even if I am a Filipino myself, I never dare try eating balut. Hahaha!
By the way, each region, each place that you go to, there's always a must-try. SO don't limit yourrself. Make your own list!

I've never had the guts to try balut before... I like Bibingka and I would highly suggest eating yema. It's great! Especially for people who have a massive sweet tooth.:D

Los Banos is a good place to go to for a food trip. Restaurants swarm the ares. Bat Cave offers the best Lechon Kawali and Ihaw Express the best BBQ in town. =)

Why not? If it is because of the 'itik', then you should try penoy. Choose the 'higop' when buying penoy. Yummy!:D

And anything that's served differently here in the Philippines is a must-try. Say, pasta. The entire world has it's own version. Here, we have our spaketchup!! (hehe -- at least that's what we call it at home) Spaghetti version for Pinoy kids...sweet, w/ lots of hotdogs and ketchup!!

I agree that each region has its own delicacies that is a must try. One of my team members gave me this 'candied' sort of pili nuts from Bicol. Then when we went to visit a souvenir shop in Bohol, they had Peanut Kisses, apart from the other delicacies that was imported from other provinces. The ube from the Good Sheperd in Baguio is still my favorite version of ube. The list can really go on...
